Wheat berry or barley drink, Mote con huesillos


As soon as the spring star in Chile, you can find little carts selling this traditional drink on the streets. A little like the Aguas Frescas in Mexico. Is very filling and a terrific snack if you are sightseeing.

Wheat berry or barley drink with dried peaches or Mote con huesillos
for 6 people
Ingredients:
  • 12 small dried peaches 
  • 3 cup cooked wheat berry 
  • 1 cup sugar
  • 1 liter of water
  • cinnamon to taste, starting with 1 teaspoon orange zest
Directions:

  1. Soak the dried peaches, with a teaspoon of cinnamon and a piece of orange peel in water overnight. The next day cook until soft, about 15-20 minutes.
  2. Place sugar in a saucepan and cook over low heat until a dark caramel form. 
  3. Pour over cooked dried peaches and stir to incorporate, this will give sweetness and color. You can do the same with molasses in USA, dissolved in hot water from the cooked peaches.
  4. Cook the wheat berry according to package directions.
  5. Refrigerate.
  6. To serve, place 1/2 cup wheat berries in a tall glass, add 2 peaches and cooking liquid to fill the glass.
  7. Add sugar if desired. Serve very cold.
